Deep-dish Chocolate Chip Caramel-filled Cookies
Preheat oven to 350°F.
Prep Time: 15 minutes
Bake Time: 12–15 minutes
Serving Size: 1 cookie

Ingredients
2 cups flour
1 tsp baking soda
2 tsp cornstarch
1/2 tsp salt
3/4 cup butter
3/4 cup brown sugar
1/4 cup white sugar
1 egg (or three table spoons of egg substitute)
2 tsp vanilla extract
1 cup milk chocolate chips
12 Ghirardelli Caramel Squares, unwrapped

Directions
- Put muffin/cupcake liners in muffin pan and set aside.
- In a medium bowl, mix together flour, baking soda, cornstarch and salt, set aside.
- In a large bowl, beat sugars and butter with an electric mixer until creamy. Add egg and vanilla and beat until mixed.
- Gradually beat in flour mixture, and then stir in the chocolate chips with a wooden spoon.
- Drop cookie dough in the bottom of the lined muffin tin, add a Ghirardelli Chocolate Caramel and top with a table spoon of cookie dough.
- Bake 12–15 minutes, or until the tops of the cookies are golden brown.
- Remove from pan and place on wire cookie rack to cool.
